Pumpkin Cheesecake Bites



Hello everyone! It’s that time of season that Halloween, Thanksgiving, and Christmas are coming. Let me just say that I love the holidays. Well, today I am going to share with you my recipe for pumpkin cheesecake bites. They are super easy to make. I made these for my family and they even last day. I hope you enjoy this blog.



*****Ingredients *****

--For Crumble--
1.5 Cup of Graham Crackers Pre-crumbled
1 Stick of butter; melted
2 Tablespoons of brown sugar

--Filling--
2 8oz  Cream cheese; room temp
1/2 can pumpkin puree
1/4 cup of sugar (to your sweet tooth preference)
1 teaspoon of nutmeg
2 teaspoon of vanilla extract

--Garnish--
Whip cream in a can
Cinnamon 

*****Procedure*****


  1. Mix the graham crackers with melted butter stick. Don't forget to add brown sugar, When you are done place cupcakes wraps in cupcake pan.  (This should make about 16 bites) Then  place the mixture of  graham crackers in the cupcake pan. Make sure to make the crust flat. After this place the pans in the freezer.
  1. To stat the filling place the 2 8oz of cream cheese. Blend it for awhile. Add pumpkin puree and continue to blend. Finally add the sugar, nutmeg, and vanilla extract and blend again. Remember to take the crust out of the freezer when filling is done. 
  1. I personally didn’t measure the amount of filling for each bite. I just added how much I would like in each bite. 
  1. After you finish the filling and placing it on the crust. Then place them in the fridge overnight. For quicker results freeze them for about 2 hours.
  1. After all that is done remove the cupcake wraps off cheesecake bites. 
  1. Add the Whip-cream on them with little sprinkle of cinnamon. 
  1. Finally and last step is to enjoy them.
